This elegant salad brings together juicy oranges, peppery greens, creamy burrata, and a pop of pomegranate sweetness—all dressed in a light, tangy vinaigrette. Ingredients
- 2 Oranges, sliced into rounds
- 2 Small blood oranges, peeled and sliced
- 1 Fennel bulb, thinly sliced
- 1 cup Arugula or baby greens
- 8 ozs Burrata Cheese, torn into pieces
- 2 tbsps Marianello Lucca Extra Virgin Olive Oil
- Salt & Pepper, to taste
- Pomegranate arils, for garnish (optional)
- Fresh parsley leaves, for garnish
Directions
Prep the Citrus & Vegetables: Arrange the orange and blood orange slices on a large serving platter. Scatter the fennel slices and arugula leaves over the citrus.
Add the Burrata: Gently nestle the torn burrata pieces among the fruit and greens.
Dress the Salad: In a small bowl, whisk together the olive oil and vinegar, seasoning with a pinch of salt and pepper. Drizzle the dressing evenly over the salad.
Finish & Garnish: Top with a handful of pomegranate arils and fresh parsley leaves. Sprinkle on a few fennel fronds for a bright, herby finish.
